  1. I can always tell a professional. They always flick stuff on, never carefully, or clumsily "put" stuff on. A flicking action takes more skill and accuracy. This goes for many trades, plastering, bricklaying, whatever. It is a pleasure to watch real tradesmen at work. People take this for granted too much.

  2. I tried 76% hydration with 36 hour fermentation and it turned into an ugly pile of mush. Never again less than 70%.

  3. The pizza started screaming and crying just before it hit the oven… you ain’t fooling nobody by blaming a kid 😉
