I bet most of you haven’t cooked with the leaves of the zucchini plant but here’s your sign to try! If you can get your hands on these delectable stems and leaves you can do so much with them. Their flavor is so unique and delicious. My mother used to always make this stew when I was growing up in Italy and it brings back such sweet memories making it now for the first time in many many years (probably since I’ve lived in America). You absolutely can use the stem and leaves, I advise you to strip the veins of the stem because you can choke on them and it peels off the little spikes.
I also whipped up a quick side dish of spicy beef and swiss chard that was the perfect pairing for this warm stew. And of course, you can’t skip out on dessert! We sat al fresco and enjoyed some cornettos (like croissants) with Nutella filling and our espressos. Yum yum yum. Molto delizioso!
