Today’s dish is one of those meals that just works.Comforting, creamy, weeknight-friendly, and still chef-driven.
Creamy orecchiette with sausage, mushrooms, and spinach.
Balanced, not heavy.Rich, but controlled.The kind of pasta you actually cook at home.
We build flavour properly: good colour on the sausage, patience with the mushrooms, a quick deglaze, gentle cream, pasta water to bind — not drown — and a clean finish.
Nothing fancy.Just cooked with intention.
🧾 INGREDIENTS (SERVES 4)
* Orecchiette pasta – 400 g
* Italian sausage (pork or chicken) 400 g
* Mushrooms (cremini) 300 g
* Shallot or small onion: 1 pc
* Garlic, minced – 3 cloves
* Baby spinach – 120 g
* White wine – 100 ml
* Cream – (used gently, not heavy)
* Olive oil – 2 tbsp
* Butter – 30 g
* Parmigiano Reggiano, finely grated – 60 g
* Chili flakes – ½ tsp (optional)
* Salt & black pepper – to taste
* Pasta cooking water – as needed
* Optional finish: lemon zest and a squeeze of lemon

This is one of our most frequent meals in our household. We do brocollini and hot poultry italian sausage. And instead of mushrooms, we use anchovy for the umami funk
What sausage was that? Like brand or what?
I make somewhat of a variation of this pasta at home, with chicken mince, replace the heavy cream with sour cream, and add fennel. 👌🏽👌🏽
Everything looks good except for the Teflon coated pan that you cook it in unless you want to get cancer stop using those pans
This looks fun. My other half doesn't like spinach, and not enthusiastic about mushrooms 🙁
maybe I'll just put a lot of parsley, and take all the mushrooms out of his plate to mine before serving
