  1. Mediterranean style lamb chops 🐑

    1 rack of lamb (2.5-3lb)
    2 tbs olive oil
    1.5 tbs lemon juice
    1/2 tbs salt
    1/2 tsp black pepper
    1/2 tbs Italian seasoning
    2 garlic clove, grated

    Cut the rack of lamb into chops, then add to a bowl with all the ingredients listed above. Mix well, marinate for 30 mins, and do not exceed 2 hours or the acidity from the lemon will begin to cook the meat.

    To cook: heat up a pan on medium-high heat. Coat the pan with olive and lay the lamb chops down flat. Cook in batches for 2-3 minutes per side or until browned. In the final minute of cooking, add a knob of butter and baste the lamb. For medium lamb chops, remove at about 140F. Rest for 5 minutes before enjoying.

  2. You can also get the butcher to slice it for you if it's intimidating to cut it up. My fave lamb rack recipe is to crust it with freshly ground coarse cumin, amazing everytime
