Pasta Dough
(Three variations, for a multicoloured dough if desired)
Plain dough:
200 g 00 flour.
1 egg.
Spinach dough:
120 g 00 flour (add more flour if the dough is too sticky).
2 tablespoons blanched,
well-drained, and puréed spinach.
1 little egg.
Tomato dough:
120 g 00 flour (add more flour if the dough is too sticky).
2 teaspoons tomato paste.
1 little egg.
Filling:
250 g Ricotta cheese.
50 g blanched, well-drained, and finely chopped spinach.
50 grams of grated Parmesan cheese.
Freshly ground black pepper, to taste.
A pinch of nutmeg.
