Considered I am in Genova, and Pesto is our bounty, and more importantly perhaps even falls under the UNESCO designation we recently merit, for our cuisine, perhaps the word PESTO should be explained. Moreover, try making this "condiment" for the pasta with an actual mortar and pestle – the derivation of our famous genovese PESTO basilico itself…the ancient tool with which it's made best, rather than a food processor. Happy you're making delicious food, but PESTO is indeed our heritage, and I felt it important to not loose the opportunity to remind hungry viewers to remember where their food comes from, historically and procedurally. Don't want to go woke on PESTO, but that UNESCO honor implores me to, at minimum, remind folks how it's made; what it is here in Italy.
