This Fried Eggplant Sandwich Should Be Illegal 🍆🥪

Crispy eggplant, creamy avocado, salty feta, and that dried tomato pesto… this one hits HARD. Inspired by Chef Max Mariola vibes, but made my way 😮‍💨

Slice eggplants and fry until golden and crispy. Add green onions and Cherry tomatoes and fry as well.
Toast sourdough until crunchy on the outside, soft inside.
Spread dried tomato pesto generously.
Layer fried eggplant, sliced avocado, cherry tomatoes, red onions, green onions, and crumbled feta cheese.
Close the sandwich, press lightly, and enjoy immediately ✨
