*Italian Vitello Tonnato Sandwich*

*Ingredients:*
_For the Vitello Tonnato:_
– 14 oz veal or thinly sliced beef
– 2 medium carrots, peeled and chopped
– 1 small shallot, peeled and chopped
– 2 celery stalks, chopped
– 2 garlic cloves, peeled
– 1 bay leaf
– 6 cups cold water
– 1 cup white wine
– 1½ tsp coarse salt
– 1 tsp black peppercorns
– kitchen twine
_For the sauce:_
– 1 cup tuna in oil, drained
– 1 egg yolk
– 1 Tbsp capers, drained
– 3 anchovies, drained
– 1½ Tbsp olive oil
– juice of ½ lemon
– 3 Tbsp reserved veal broth
_For the sandwich:_
– 1 focaccia baguette
– 1 handful lettuce
*1. Make the Vitello Tonnato*
Layer the veal (or beef) slices on top of each other and roll them into a tight log, tying together with kitchen twine to secure the bundle. In a large pot, bring water to a boil and add peeled and chopped carrots, celery, the shallot, garlic, salt, peppercorns, white wine, and bay leaf. Place the meat log in the water, reduce heat, and cook covered for 30 minutes. Once cooked to medium rare, drain the veal and let it cool at room temperature for at least 1 hour. Reserve the broth for the sauce.
*2. Make the sauce*
Blend together the drained tuna, anchovies, capers, egg yolk, juice of ½ a lemon, olive oil, and 3 tbsp of reserved broth until smooth.
*3. Assemble the sandwich*
Fill the focaccia baguette with lettuce, layers of sliced Vitello Tonnato, the creamy tuna sauce, and voila! Lunch for a king.
