Search for:



For the sauce:
• 1 shallot

• a splash of white wine
• juice of 1/2 lemon
• a bit of lemon zest
• ~200 ml heavy cream
• ~50 g crème fraîche
• Parmesan (adjust the consistency with it; the more you add, the thicker it gets)
• parsley & dill
• salt, pepper, and chili flakes

For a crispy skin on the salmon:
Pat the skin dry. Use a high temperature in the pan and something to put weight on the salmon; otherwise, it won’t sit evenly in the pan.
