Ingredients
• 12 oz pasta (any shape)
• 2 cups cherry tomatoes
• 1 zucchini, sliced
• 1 squash, sliced
• ½ onion, sliced
• 2–3 cloves garlic
• 1 wheel Boursin (any flavor)
• 1–1½ cups mozzarella pearls
• 1–2 cups fresh spinach
• Olive oil
• Salt & pepper

Recipe
1. Preheat oven to 400°F
2. Add tomatoes, zucchini, squash, onion, and garlic to a baking dish
3. Drizzle with olive oil, season with salt & pepper
4. Place Boursin in the center
5. Roast 25–30 minutes until jammy
6. Cook pasta separately
7. Stir roasted mixture into pasta
8. Fold in spinach and mozzarella
9. Bake 10–15 minutes until melty
