Great recipe! You probably got the cheese for protein, but what i'd do is just not worry about protein for this one meal, ditch the cheese and spend the money on really nice tomatoes. Then, instead of garlic bread, a local bakery near me does really good sourdough for a £1. Got me wanting to make bruscetta now, which i haven't had since Summer, great inspiration.
Nigella does a really good lemon spaghetti and marmite spaghetti (2 different dishes, don't worry!) these would be great for affordable meals.
Fish cakes are another good idea for this series, and if you wanted to really challenge yourself, try making a veggie version using heart of palm or jackfruit instead of the fish, ive seen a lot of recipes doing that but never tried it myself but when i ate meat and fish i used to adore a fish cake,

we make our own bruschetta too, but buy a bake a home french stick, one big tomato and we dont melt the mozarella.. and you cant forget the balsamic vinegar to drizzle on top, delicious!

I've tried for a few years to grow basil from seed but it just doesn't take, neither does coriander 😭😭

Fast, easy, healthy, flavorful. Can’t get much better than that. Like you, I’m not vegan but love vegan food. Just wanted you to know that your Veganuary challenges have inspired me to put more vegan/vegetarian meals into my rotation. Tonight I’m doing what I call Irish Nachos – instead of corn chips I’m going to bake some thin sliced potatoes then pile everything on top. Crumbles of marinated tofu in air fryer, can of fire roasted corn with chilis, homemade refried beans, then salsa, guacamole, sour cream and cheese. Dinner can’t come soon enough lol.

You can grow more basil. Essentially what you have there is a bag of cuttings. You just need to trim them down a bit, put them in water to root, then pot them up. Free basil!
