Ingredients:
Ground turkey
½ onion
Carrots
Celery
Parsley
Grated parmesan cheese
Chicken stock
Olive oil
Italian bread crumbs
1 egg
Pasta
Cleaned baby spinach
Directions:
In a mixing bowl add ground turkey, grated cheese, bread crumbs, some parsley and 1 egg
Add salt and pepper and combine
Take mixture and make meatballs roughly the size of a golf ball
Add to a pan with a little olive oil and pan fry till you get a little color, then remove
In a large pot add olive oil
Add carrots, celery, onion and parsley and fry. All should be a fine dice
Add chicken stock
Add spinach
Add meatballs and cook for 20 minutes as a simmer
Salt and pepper to taste
Add additional parsley, to taste
Cook pasta separately
Plate by adding pasta first then pour soup mixture over
Add parmesan cheese and a drizzle of olive oil,
