*Chicken Parmesan:*
– 4 skinless, boneless chicken breast halves or thighs, 1 lb (I used 2 12 oz breasts, cut in half)
– salt and freshly ground black pepper to taste
– 2 large eggs
– 1 cup panko bread crumbs, or more as needed
– 3⁄4 cup grated Parmesan cheese, divided
– 1 tsp italian seasoning
– ½ tsp granulated garlic
– 2 tbsp all-purpose flour, or more if needed
– 1⁄2 cup vegetable oil for frying, or as needed
– 1⁄2 cup prepared tomato (marinara) sauce
– 1⁄2 cup grated mozzarella cheese
– 1⁄4 cup chopped fresh basil or dried basil
– 3-4 slices provolone cheese
– 4 tsp olive oil

*Marinara Sauce (I make a half recipe of this, or you could use a jar from the store):*
– 2 tbsp extra-virgin olive oil
– 1 medium onion, chopped
– 8 oz fresh mushrooms or 4 oz can, sliced (optional)
– ½ to 1 bell pepper, chopped (optional)
– 2 tbsp minced garlic or 1 ½ tsp garlic powder
– 2 15 oz cans diced tomatoes
– 1 16 oz can tomato sauce
– 2 6 oz cans tomato paste
– 1 ½ tsp dried basil, crumbled
– 1 ½ tsp dried oregano, crumbled
– ¼ tsp dried thyme
– ½ tsp dried parsley
– ½ tsp red pepper flakes
– 1 tsp salt
– ¼ tsp freshly ground black pepper
– 1 ½ tsp sugar
– 1 tsp red wine vinegar
– 1 cup chicken broth or water

*Spaghetti:*
– 8 oz thin spaghetti noodles
– dash of salt

*Green Salad (or use a bag salad from the store):*
– Romaine hearts
– Roma tomatoes
– English cucumber
– Mexican blend shredded cheese
– Bacon crumbles
– Black olives
– Dressing of choice
