Mediterranean Chicken
Ingredients
• Bone-in or boneless chicken thighs
• 2-3 bell peppers, sliced
• 1 small red onion, sliced
• 3-4 cloves garlic, minced
• ½ cup cherry tomatoes
• ⅓ cup olives, halved
• 1-2 tbsp capers
• 1 tsp oregano
• 1 tsp paprika (smoked if you have it)
• ½ tsp ground cumin
• Zest + juice of 1 lemon
• Olive oil
• Salt & pepper
• Fresh parsley or basil
How to Make
1. Season chicken with salt, pepper, oregano, paprika, cumin, and lemon zest.
2. Heat olive oil in a large skillet or Dutch oven. Brown chicken thighs skin-side down (if skin-on) until golden; remove and set aside.
3. In the same pan, sauté bell peppers and onion until soft and lightly caramelized.
4. Add garlic, tomatoes, olives, and capers-cook 1 minute.
5. Nestle chicken back in. Add lemon juice and a splash of chicken broth or white wine.
6. Cover and simmer 20-30 minutes (or bake at 375°F for 30-35 min) until chicken is tender.
7. Finish with herbs.
