INGREDIENTS
For the chicken:
2 lb boneless chicken breast fillets, cut small
2 tbsp olive oil
2 tsp smoked paprika
1½ tsp garlic powder
½ tbsp Italian seasoning
1½ tsp black pepper
Salt to taste
4–5 tbsp olive oil (for cooking)
Creamy Tuscan Sauce:
3 small cubes unsalted butter
1 large onion, thinly diced
3–4 garlic cloves, finely chopped
3 tbsp tomato paste
1 cup diced tomatoes
2 tbsp sun-dried tomatoes
1 cup sliced mushrooms
1 cup fresh spinach
2 cups heavy whipping cream, unsweetened
1 tsp smoked paprika
1½ tsp garlic powder
1½ tsp black pepper
1½ tsp Italian seasoning
4–6 tbsp grated Parmesan cheese
Salt to taste
Method
Step 1 – Marinate Chicken
Rub chicken fillets with olive oil, smoked paprika, garlic powder, Italian seasoning, black pepper, and salt.
Let it marinate for 5–10 min (or longer for extra flavor).
Step 2 – Sear Chicken
Heat 4–5 tbsp olive oil in a pan.
Cook chicken fillets until golden on both sides and fully cooked.
Remove chicken and set aside.
Step 3 – Make Creamy Tuscan Sauce
Melt butter in the same pan.
Sauté onions until soft, then add garlic.
Stir in tomato paste, diced tomatoes, and sun-dried tomatoes.
Add mushrooms and cook 2–3 min.
Toss in spinach and let it wilt.
Step 4 – Finish the Sauce
Pour in heavy cream and stir until smooth.
Season with smoked paprika, garlic powder, black pepper, Italian seasoning, and salt.
Return cooked chicken fillets to the pan.
Add & stir Parmesan cheese until creamy and velvety.
Spoon creamy sauce over the chicken generously.
Step 5 – Combine & Serve
Serve immediately over buttery mashed potatoes.
🥔 Mashed Potatoes:
Ingredients
Potatoes 4-5
Water as required
Unsalted butter 6 tbsp
Unsweetened heavy whipping cream 1-1/2 cup
Salt to taste
Garlic powder 1 tsp
Black pepper 1/2 tbsp
Method
Step 1 – Boil Potatoes
Peel and cut 4–5 potatoes.
Boil in water until tender.
Step 2 – Mash Potatoes
Drain water, mash potatoes until smooth.
Step 3 – Add Butter & Cream
Mix in 6 tbsp butter and 1½ cups heavy whipping cream.
Season with salt, garlic powder, and black pepper.
Step 4 – Serve
Plate alongside creamy Tuscan chicken.
Drizzle any extra sauce over the top.
