A quick, low carb Italian sausage soup for a cold day. 1 lb italian sausage, 1 medium diced onion, 2 medium diced carrots, 2 stalks diced celery, 3-4 cloves minced garlic, 4 c chicken broth, 2 c chopped fresh spinach, parmesan and mozzarella cheese. Brown sausage with a little olive oil then remove from pot, add in onion, carrots and celery, saute until softened, add sausage back, add chicken broth/stock, bring to boil, turn to low, cover and simmer 30-35 minutes, add spinach, simnmer another 5 minutes, add cheese and serve, top with parmesan and/or green onions. Season meet and veggies with garlic powder, pepper and italian seasoning as they cook.
