Ep 1 | Mediterranean-Inspired Series: Chicken with olives, preserved lemon, dates, and capers.
This dish is a fam favorite and a staple in our meal rotation for a reason. It’s packed with SOOO much flavor coming from the preserved lemon, capers, olives, and date syrup. It’s super easy to make and pairs perfectly with couscous, veggies, or a fresh salad. You just throw everything in a large non-reactive bowl and then roast at 400 degrees for 45-50 minutes. Save this recipe and add it to your weeknight meals.
Ingredients:
6 pasture-raised chicken legs with thigh
3 tbsp organic olive oil
½ cup (75) of organic capers
1 cup (145g) organic green olives
1 cup (150g) organic dates
2 organic garlic cloves, chopped
1 preserved lemon
3 tbsp of red wine vinegar
2 tbsp of organic date syrup
Salt and pepper to taste
Method:
-Place chicken in a large, non-reactive bowl and add all of the ingredients, minus the preserved lemon.
-Mix everything together and then allow the chicken to marinate in the fridge for 1 hour or so.
-Preheat your oven to 400 degrees F.
-Remove the chicken from the fridge and spread everything on a large baking tray. Add the preserved lemon and drizzle some extra date syrup over the chicken. This part is totally optional but highly recommended by my taste buds!
-Bake for 45 to 50 minutes, until the meat is cooked through. Serve with couscous and side salad 🙂
