This shakshuka for one is perfect for those days when you need to take a break from that bowl of cereal, and you want something that will sustain you for a good part of the day, while also making you feel happy and satisfied.
I make this quite often during my lunch break because it is very quickly done, healthy and with ingredients I always have at home. Just bell peppers, onions, garlic, some tomato sauce or fresh tomatoes and tomato paste, the eggs. Spices I use are Cumin, Harissa and Zaatar. You can add what you want, bacon, chorizo, cheeses, or spinach or eat it with just the basics.
No!! Sweat onions hot pepper bell pepper, add minced tomatoes with the juice and 1 spoon of tomato paste, add paprika pepper salt chlili/cayene maybe touch of cumin, reduce – add eggs and wait till reaches personal favortie doneness – top off with fresh cilantro – done.

This would be good with a spicy sausage. Chorizo, hot links, or hot italian would all work well. Gonna try that my next day off.

Why not use olive oil? I thought EVOO was best for salad dressing, pesto, and drizzling over things at the end.
