Wagamama launches new ‘Udonara’ fusion dish inspired by Italian cuisine.

Wagamama has kicked off 2026 with a bold new dish which pushes the boundaries of pan-Asian fusion cuisine.

Available nationwide from 5th January 2026, the new Udonara has been created in response to insight which shows that consumers are increasingly drawn to flavours inspired by cuisines from around the world, so Wagamama has developed this playful creation bringing together unexpected global flavour profiles.

Wagamama’s new Udonara is a Japanese-Italian inspired mashup which reimagines classic carbonara, whilst offering a plant-based twist, with thick udon noodles, coated in a rich, creamy sauce, and topped with crispy, smoky vegan bacon, king oyster mushrooms, and fresh coriander cress.

Part Asian, part Italian, full on flavour. The Udonara trend started in Japanese noodle bars and has taken TikTok by a storm over the past few years. Wagamama’s version is thick, saucy, and a little smoky: the kind of mix that shouldn’t work, but definitely does.
