Man. I love this dish too! However, it is hard to find Escarole in TX?! I use Swiss Chard and Spinach mostly, but wish Escarole was available.
My Food Wish: Filipino recipes! Would love to see an "easy" at home version of sisig if possible. Same with kare kare.

For those needing only 1-2 portions of this, I’d used only some of the greens as I think I’d like the crunchy version. Add more greens when you heat up the leftovers. This is easy comfort meal.
