Italian American food is an evolution of Italian food that branched off of southern immigrants, who were poorer at the time, and gaining wealth, started adding to typical, simpler dishes more ingredients they could find and afford in the US. It's not bad at all, but being an Italian from Italy, I have to say that here a pasta dish, generally doesn't KO me, but I am positive it would in the US, and not for quality or anything like that, it's just the heft of the ingredients, and overall more "nutrient dense" style, that would get me.
    Here it's not uncommon to eat even just pasta with good quality butter/ EVO oil, or just not heavily seasoned meat/fish, and I truly appreciate being able to eat basically until near belly explosion, wait 15 minutes and be able to walk it off😂
