Creamy Bacon & Halloumi Tuscan Pasta❤️

Ingredients:
200g Halloumi
200g Bacon
1 Brown Onion
3 Cloves Garlic
6 Sun-dried Tomatoes, Chopped
250g Cherry Tomatoes
1 Tbsp Tomato Puree
1tsp Paprika & Basil
100g Baby Spinach
300ml Chicken Stock
80g Creme Friache
320g Pasta
40g Parmesan

Method:
Bring a pan to a medium heat and add in the sliced halloumi and cook each side for 3-5 minutes until browned and then remove from the pan and set aside.

In the same pan add some oil from the sun-dried tomatoes jar and add in the onion and garlic, cook until fragrant

Add in the bacon and cook until crisp.

Then add in the sun-dried tomatoes and cherry tomatoes and combine.

Allow to cook for a few minutes and then add in the seasonings and coat.

Add in the tomato puree, then pour in the stock and add the spinach, combine and then cover and simmer on a low heat.

In a pan of boiling salted water add in the pasta and cook to the packets instructions.

Roughly 5 minutes before the pasta has finished cooking, take the lid off of the sauce and push down the cherry tomatoes to let all of the juice and flavour out.

Add in the creme friache and parmesan and combine.

Drain the cooked pasta and then add this to the sauce and coat.

Add back in the halloumi and thats it!

  1. 😅 I also have to weigh pasta for the same reason – a chef friend of mine said the right amount is a big handful but it still never looked enough lol
