Old-Style Lasagna alla Bolognese

Ingredients

For the Bolognese sauce

500 g ground beef (traditionally mixed with a little pork)

2 tbsp olive oil

1 small onion, finely chopped

1 carrot, finely chopped

1 celery stalk, finely chopped

2 garlic cloves, minced

2 tbsp tomato paste

2 cups tomato passata

1/2 cup whole milk

Salt and black pepper to taste

A pinch of nutmeg

For the béchamel (white sauce)

4 tbsp butter

4 tbsp all-purpose flour

3 cups whole milk, warm

Salt, white pepper, and nutmeg to taste

Other ingredients

Preparation

Heat the olive oil in a heavy pan over low heat. Add onion, carrot, and celery. Cook slowly until soft and fragrant.

Add the meat and cook gently, breaking it apart, until lightly browned.

Stir in the garlic and tomato paste, then add the passata. Let it simmer slowly for at least 45 minutes.

Pour in the milk, season with salt, pepper, and nutmeg, and simmer a little longer. The sauce should be rich, not rushed.

For the béchamel, melt the butter over low heat. Add the flour and stir for 1 minute.

Slowly add the warm milk, whisking until smooth and creamy. Season lightly with salt, white pepper, and nutmeg.

Assemble the lasagna: spread a thin layer of Bolognese in a baking dish, add lasagna sheets, béchamel, and Parmigiano.

Repeat the layers until the dish is full, finishing with béchamel and plenty of cheese on top.

Bake at 180°C (350°F) for about 40–45 minutes, until golden and bubbling.

Let it rest for 10 minutes before serving. Old recipes respect patience.
