This easy to make, caramelised pepper focaccia will blow your socks off!

Ingredients:

DRY
– 500g bread flour
– 10g salt

WET
– 400ml water
– 7g instant yeast
– 6g brown sugar
– 15ml olive oil

Mix the wet ingredients.

Add salt and flour.

Mix well and scrape bowl clean.

Cover and let sit for 20-30 mins.

Stretch and fold dough with wet hands until a smooth
ball is formed.

Let sit for another 30 mins.

Repeat – stretch and fold.

Cover dough and sit it in the fridge overnight.

Line baking tray with parchment and olive oil.

Tip out dough onto the tray fold dough and flip so its
smooth side is on top.

Cover with baking parchment and another tray and let sit for another 1-2 hours.

Pull and stretch the dough to cover the tray and add toppings of choice this time I’ve used caramelised peppers and rosemary.

Dimple the dough with fingers to get the toppings better mingled.

Add sea salt flakes on top.

Bake for 18 mins in the oven 220c or 428 Fahrenheit.
