On the ltalian island of Sardinia, there’s a type of cheese that is made in a very extreme way.
this cheese is called casu marzu. First, they put blocks of fresh pecorino cheese in the open air and let the Piophila casei flies infest them. After a while, these flies will lay their eggs in the cracks of the cheese and hatch into larvae that will eat away at the cheese from the inside.
after a few months, the texture of the cheese will change to soft and creamy, thanks to the lagrima liquid produced by the fly larvae, this cheese is best eaten with crispy pane bread and a glass of wine, once you bite into it, you will feel the creamy sensation of the cheese and the slightly bitter spicy taste of the larvae.
