Today’s granny is fantastic. Kneading and rolling pasta dough isn’t easy. Maria’s strength and stamina are to be applauded. Thank you Vicky for another excellent episode.

Spaghetti alla chitarra has a lovely mouth feel. I prefer it to the cylinders except for spaghetti all'assassina, which calls for regular ribbons.

Maria's a lovely woman, and the pasta she made looks really tasty! Sometimes the most simple pasta dishes are the best, the freshest of pasta with parmeggiano and high quality olive oil!
I'm really hungry for that now haha, maybe I'll try it out too and make my own fresh pasta!

I have a “ guitar” made by my grandfather. It’s takes some pressure to cut the noodles with the metal strings! Brava Maria. I was thinking her lunch needed some flaky salt and fresh ground pepper.

Happy New Year! Maria is yet another gem. She has been making the family’s pasta by hand for ninety years! To think she carried water on her head before plumbing. These ladies are tough as nails. I'm a 77 yo guy and I'll tell you I'm feeling my age. I have my mother's pasta board and mattarello and I make pasta now and then. It's hard work. This woman puts me to shame and that pasta looks delicious…I get why she likes it simple, though I might have done it with aglio e olio. I wish her well.
P.S. More Pasta Guys. I'm sure there are more out there.
