  1. The one issue I have with Japanese-style pizza is that no matter which pizza place I go to here, it’s always the exact same issue (not the exact same taste)—

    It’s always undercooked.

    They always come so damn close to perfection but they seem to be scared of the necessary char that is needed to balance out the sweet flavor from the sauce, and thus not only does the dough suffer from it but so does the cheese, ending up in a state similar to what japaneat described.

    Despite this, I recognize the passion a lot of the places here pour into their own version of what pizza is and have grown to appreciate even the flaws that come with it. One of my favorite pizza places in Shibuya isn’t even a pizza place, it’s a bar, and once you get the alcohol flowing for the night, it’s the best there is.

  2. I chose to believe he does everything he says he does.. so yeah, he did climb into that oven and they told him to stop. Very relatable.

  3. It's true. Had my first Japanese Neapolitan pizza in Hiroshima in 2018 and was surprised how good it was.

  4. Don't worry, I won't sleep on ANY pizza. Sat on a left over piece once and it wasn't much fun at all, so I'll just stick to eating that stuff in the future. 🙂
