Mediterranean Tuna Pasta Salad

Ingredients
– 1 tin tuna
– 200g pasta, I used orchettie
– 1/2 red onion
– 3 baby red peppers or 1 large red pepper
– 50g spinach
– 15g basil
– Handful black olives, chopped
– 2-3 tbsp red pesto
– 1/2 lemon
– Salt and a pepper

Cook the pasta for 10 minutes in salted boiling water, rinse with cold water and drain well.

Remove excess liquid from the tuna.

Thinly slice the onion, dice the basil and shred the spinach. Slice the red pepper and roughly chop the olives. Mix everything together with the pesto, add the amount to your liking, a squeeze of lemon and good amount of salt and pepper.

This will keep in the fridge for up to three days,
