If you love jam-filled cookies, these are a must-try. Definitely one of my top three favorites, they’re so crumbly and utterly delicious. Give them a try, you won’t regret it!

Ingredients:
170 g all-purpose flour (1⅓ cups + 1 tbsp)
120 g butter, cold (½ cup + 1 tbsp)
80 g powdered sugar (⅔ cup)
1 large egg yolk
Zest of 1 orange
½ tsp baking powder
1 tsp vanilla extract
1 tbsp honey
Jam of choice (as needed)

Instructions:
1. In a bowl, rub the cold butter into the flour until a sandy mixture forms.
2. Add the sifted powdered sugar, egg yolk, orange zest, and baking powder.
3. Pour in the vanilla and honey, then mix just until a soft dough comes together.
4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to 1 hour.
5. Lightly flour your work surface and roll out the dough (not too thin) using a rolling pin or even a glass bottle. Use a round cookie cutter to cut out circles.
6. Spoon about 1 teaspoon of jam into the center of each circle. I used apricot jam, but feel free to use your favorite.
7. Gently pinch the sides to enclose the filling, sealing well so they don’t open while baking.
8. Bake at 350°F (180°C) for 15–18 minutes, until lightly golden.
9. Let cool slightly, then enjoy these incredible biscotti

  3. The italians are noted for their beautiful and delicious cookies. I had a supervisor who was italian and would tell us about what they do at weddings and other celebrations. All the different cookies that they would make. He was a good supervisor. I will think of him and his wife while making this. Thank you.

  4. Butter shall be mixed with powdered sugar first then you can add the yolk and the flower…. (And this is one of Iginio Massari's rules for pasta frolla!)

  5. I’m afraid the jam as shown isn’t following the recipe which says to close up the cookies. Jam will run all over if you don’t. Going to try these -thanks very much much! Merry Christmas!

  6. Terrible recipe your description is off you need more flour than what you said secondly need to tell your viewers how thick to roll out the dough and what size round kid are you using
