After hiking into a remote spot, a stone fire pit is built by hand and a cast-iron pan is placed over open flames. A large cut of beef is trimmed, heavily salted, seared, and slowly braised in a rich garlic-butter broth until tender and sliceable. Jalapeños are roasted over the fire, bread is prepared, and the sandwich is finished the traditional way — soaked in hot, savory juices until dripping and messy.
