Pepperkaker Cookies: My recipe makes about 50 small cookies. Blend 3 tablespoons of fresh chopped ginger with juice and zest of 1 orange (You may need to add a bit of water to help it blend). In a pan or pot, gently heat 220g butter, 1/2 cup honey, 150g white sugar, 1 cup brown sugar, 1/2 teaspoon pepper, 1 teaspoon ground nutmeg, 1 teaspoon salt, 2 teaspoons ground cinnamon, 4 tablespoons ground ginger, the blended ginger and orange, 2 teaspoons ground cloves, 2 teaspoons vanilla extract until the sugar has dissolved and butter melted. Leave to cool until caramel is warm, not hot. While waiting, mix 3 and 1/3 cups flour with 1/2 teaspoon bicarbonate soda. Stir two eggs into cooled caramel mixture. Pour caramel into flour and mix until combined. Refrigerate for two hours or overnight. Preheat oven to 180degrees C. Roll cookie dough into small balls and press down with fingertips to make flat. Cook for 12-15 minutes for a crisp cookie or 7-10 minutes for a fudgey cookie. Remember they will firm up a lot once cooled so best to take them out earlier rather than later to be safe. Enjoy dipped in tea, espresso or Vin Santo. Sometimes I top mine with pieces of dark chocolate.

Every day I get so many emails and comments asking why you can’t locate the music I use or find it using Shazam. I purchase music licenses for almost all the music you hear in my videos. I buy them them from various royalty-free production music sites and most of the time they don’t list the performer because it’s music made only for film productions with an audio watermark throughout the entire track, unless you purchase the single-use license for $50-100 per track. I use a lot of opera so often I’ll reference the opera but I won’t be able to direct you to a recording of that specific performance that you could stream or buy on iTunes or Spotify. Kudos to you for taking the time to make a beautiful and comfortable headboard for your friend. I consider myself a thoughtful hostess, but I would not have gone to all that trouble, but I would have found a lovely blanket to cover it. The fact that I couldn't do is irrelevant. I think matching drapes would look lovely. I am always impressed how much you find so much for Gianfranco to fully participate in your cooking and baking. I wouldn't be surprised if he decided to become a chef or a therapist. He shows so much intelligent concern for your well being.
