Ingredients
1 gallon raw milk
14 tbsp white vinegar
Instructions
Pour raw milk into pan
Heat and stir until 115°F
Add in vinegar
Stir well for about 1 minute
Turn off heat and cover for 20 minutes
After 20 minutes the whey will separate and leave the curd
Push curd to the side with slotted spoon and transfer into separate bowl
Start to squeeze out whey and keep draining whey
Continue squeezing curd and draining off whey
Microwave for 30 seconds
Check temperature – target 160°F
Squeeze out more whey (NOTE: It will be hot — use insulated gloves)
Stretch and fold
Microwave again for 30 seconds
Check temperature again – still looking for 160°F
Stretch and fold again
Place in cold water for 15–20 minutes
Add a little salt to the cold water
Remove & dry off, then slice and enjoy
