Frico fooled me. People said it was simple, but once I cooked it I understood why Friuli treats it with respect. In the mountains it began as melted Montasio in a pan, later stretched with potatoes into a full meal. The real lesson came at the stove: keep the heat steady, stir slowly, and wait for the cheese to pull from the pan before the flip. When it turns golden outside and stays molten inside, you know you did it right.
