There are smells that tell you exactly what season it is…and for me, this one means Tuscany, childhood, and the start of Christmas.
In my family, making caldarroste has always been a ritual. When I was little, my nonna used to take me into the woods to collect chestnuts under the falling leaves. We’d come home with our pockets full, and she would cook them the traditional Tuscan way: over the fire, in a perforated iron pan, cracking in the heat while the whole house smelled like winter and home.
Today I’m making them in the oven, the easiest way to recreate the same cozy, rustic flavor at home.Just score the chestnuts with a cross, soak them for a few minutes, arrange them on a hot tray, and roast until the shells open and the inside gets soft, smoky and sweet. It’s the perfect Italian winter recipe, a simple snack that feels like Christmas, comfort, and tradition in every bite.
Caldarroste are not just roasted chestnuts…they’re a piece of real Italian cucina povera, a reminder of slow living, holiday warmth, and family memories. They’re naturally healthy, naturally seasonal, and one of the best Mediterranean winter snacks you can make.
Serve them warm with a glass of red wine, or enjoy them as a cozy evening treat.. pure authentic Italian food, straight from the Tuscan countryside.
If you’ve never made roasted chestnuts at home, this is your sign.Save this for December nights and thank me later.
Buon appetito sunshine ☀️

I'm not going to lie I cannot get past the texture of chestnuts, but I want to like them so bad. Any tips?

How on earth do you take the fuzzy part out?
Love love love!
If you gather them yourself, make sure you know the difference between Chestnuts and Horse Chestnuts. The second one probably won't kill you, but you'll have definite and tangible regrets.
what the actual overcomplicated fuck
Chestnuts sound good and look good but then when one eats them they are not….

I can't eat chestnuts. We'll never be friends. They taste awful. I admire people who can eat them. ❤😊
