Anthony is in one of his favorite cities, Venice. He joins friend and cookbook author Lori De Mori for a seafood and risotto lunch at Trattoria da Romano. Passed down through 5 generations of the same family, Trattoria da Romano is an artist favorite that specializes in good food made with good ingredients in the traditional way. Anthony and co. enjoy cuttlefish roe, sea snails, octopus, and shrimp cooked over a wood-fired grill. The meal is topped off with a truly great, heroic risotto. In Anthony’s words, “perfect!”

Love how genuine bourdains’ laugh is when the guy refuses to yield any ounce of pride whatsoever …. “eh i’d make the girls stay w/o the cosmos, i’ll keep em here w the shit we got.” having worked in restaurants a long time that really is such a brave and gutsy attitude, it is genuinely amazing and hilarious. Like even peter luger serves espresso martini. everyone compromises a bit to stay alive. it is so awesome to hear a guy really ngaf and put his money where his mouth is.

  5. I have been fortunate enough to have been to Venice twice. I'm not that well travelled, but Venice is without a doubt my favorite city. I am now to an age and financial status where travel to another country may not be feasible, but I have just been made to make a vow to somehow make a trip to Venice one last time, for as long as possible, in the next few years.

  6. As a recovering chef and line cook I think that perfectly prepared risotto is at once the most sublime yet simple yet complex dish to master. When it is prepared and served correctly it becomes the dream and the memory that you chase forever. I never tire of eating it – this looks like the Mona Lisa of risotto. They way that cook "jumps" the risotto 2 or 3 feet in the air is like culinary ballet to me

  7. Risotto is so good if cooked correctly. My father used to say it's like eating freshly poured concrete, because it lays in your stomach!!

    I lived in Veneto for many years..the local version is a peasant one called risi con pisi
    Risotto with peas ..
    My flat was above a local.resto with a speciality in polenta and fish..guisto cosi

A question on recipe: I have been taught (and always have) saute the onions, shallots, whatever, the throw in and saute the rice (a bit), then deglaze, then comes the broth (this from my Italian ex-wife, restaurants I have worked at, etc.). Here the rice is added into the broth. Also, any onions or whatever in here? And lastly, and most importantly, any cheese??

  10. Truly great risotto. Mmmm! OK. I would not go to Europe for risotto or anything else, not even for truly great gelato. I’m just fine with what I have here in the USA. Truly great risotto! Get out of there!

  11. So beautiful! Some things are just perfect, no need to change – aspire to continue in perfection. Tonight I fried the zucchini for tomorrow’s pasta. It must be done this way for perfection. It’s not like puttanesca, done in fifteen minutes. These are the traditions. These people know these things. .. Anthony knows how special that is.

  13. i love how they dont even think about innovating their dishes, they keep the same perfected recipes through generations and its only available in 1 spot in the world. This is what authenticity and truly rich food is about

  14. Big night is my favorite film with food ! It's entertaining, Stanley tucci is a hoot and has a really good story that was told.
