This week Time Out ranked Xi’an Famous Foods the second-best Chinese restaurant in the US.

There are long lines out the door for $8 dishes featuring unexpected spices and tastes from the Xi’an region of China. These include spicy lamb skewers, liangpi “cold skin” noodles, and their famous hand-pulled “ripped” noodles.

With its bold and authentic regional fare, Xi’an “represents the wave of the future in Chinese food,” according to Chinese food historian and author, Andrew Coe. Anthony Bourdain is also a fan.

Here’s the story of how Jason Wang helped transform his father’s Queens, New York food stall into a culinary sensation.

  1. I just returned from china – worst food ive had in the country of origin. Its as if the locals taste buds are fried (PEK area). Ill stick to chow mein and chop suey from a can any day. 🙂

  2. sadly, whats the price of keeping prices low? how things are done.. how animals are grown, how environmentally friendly things are grown, how fair salary people have gotten. cheaper is not better

  3. according to the map shown on 1.29 Tajikistan and Kyrgyzstan are part of China! This is unacceptable!!!!

  4. Present human intelligence cannot think beyond 20 to thirty years for constructive work and not beyond 1 second for any destructive work

  6. This place got too big, and now they don't even make the noodles by hand, instead delivering machine-made noodles from a central location. Pathetic and disappointing, really
