Some people get too stuck on authenticity… Food evolves as it is shared with new cultures and people introduce parts of their lives and ideas into the cuisine.
As much as I respect Italian Cuisine, and how I love Italian Cuisine!
Italians needs to get down their high horse of arrogance as if their food is the only food in the world!
They are so stuck in a Tradition that they can’t accept any new ways to cook, just because it ain’t traditional!
A good Chef always thrives to learn new ways to cook, to always be an opportunist and experiment with food, to create something new, something different, something good!
I agree that the main recipe of a National Dish should be respected no matter what! But creativity shouldn’t be discouraged as long they respect the main recipe and just add new flavors to try to create something new, something good, while still respecting the culture around the dish and its flavors, but enhancing it with new ways to present it!
Now I understand how Joe, this Nepo Baby became such an arrogant POS, he picked up this behavior from his narcissistic mother who can’t even see further than her own culture!
