Smoked Cheesy Pasta recipe — rich, creamy, and full of that delicious smoky flavor 🔥🧀

🌿 Ingredients:
For Pasta:
• 2 cups pasta (penne, macaroni, or fusilli)
• Water + salt (for boiling)
For Sauce:
• 2 tbsp butter
• 1 tbsp oil
• 2 tbsp all-purpose flour (maida)
• 1½ cups milk (lukewarm)
• ½ cup cream (optional for extra creaminess)
• 1 cup mozzarella cheese (grated)
• ½ cup cheddar cheese (grated)
• ½ tsp black pepper
• ½ tsp chili flakes
• ½ tsp oregano or mixed herbs
• Salt to taste
• 1 small onion (finely chopped)
• 1 small capsicum (optional, sliced)
• 1 cup boiled/shredded chicken or smoked sausage (optional)
For Smoke:
• 1 piece of coal
• 1 tsp butter or ghee

🔥 Instructions:
1. Boil Pasta:
Cook pasta in salted boiling water until al dente. Drain and set aside.
2. Make White Sauce:
• In a pan, heat butter + oil.
• Add flour and sauté for 1 minute until light golden.
• Gradually add milk while whisking to avoid lumps.
• Cook until thick and creamy.
3. Add Flavor & Cheese:
• Add salt, pepper, chili flakes, and herbs.
• Stir in cream (if using), then add both cheeses.
• Mix until melted and smooth.
4. Add Pasta & Chicken/Veggies:
• In a separate pan, sauté onion and capsicum lightly.
• Add boiled chicken (optional) and cooked pasta.
• Pour the cheese sauce and mix well.
5. Smoke It:
• Heat a small piece of coal until red hot.
• Place a small steel bowl in the pasta pot.
• Put the coal in the bowl, add a drop of butter/ghee on top, and immediately cover the pot tightly.
• Let it smoke for 3–5 minutes for that amazing smoky aroma.
6. Serve Hot!
Garnish with extra cheese, herbs, or chili flakes.
