    Serves 2
    Ingredients:
    – 1 cup cooked and cooled quinoa
    – 1 cup cooked lentils
    – 250g cherry tomatoes chopped in half
    – 1 large cucumber diced
    – 1 cup curly parsley finely chopped
    – ⅓ cup mint finely chopped
    – 3 stalk spring onions finely chopped
    – Salt to taste

    Dressing:
    – 3 tbsp extra virgin olive oil
    – 1 large lemon freshly juiced (about 3 tbsp)

    Instructions:
    – Add all the ingredients to a bowl and stir well. Enjoy 🤍

  2. I make a similar salad, I also add some grated carrot and some marinated artichoke. And I use finely chopped red onion instead of spring onions.
    This salad is so delicious that I could eat it for every meal all week long. And that is saying something as ai hate leftovers and seldom eat them. I usually add some leafy veg to serve the salad on but if I am not going to eat it right away and will have it at work or on a picnic, I thinly slice purple cabbage and then chop it into bite size shards. The cabbage stays crispy in the jar with the salad and dressing.

  4. That’s literally an insult for Middle Eastern food
    Listen honey the tabbuleh is a delicate and delicious salad .. first of all you should cut the vegetables very very very small which means I can not see the green onion that boldly settling in the dish and the cucumber +tomato’s should be much smaller .. plus don’t add things that are not involved in the recipe the only thing you can add is apples or pomegranates..
