This cherry tomato pasta is a celebration of simplicity. The beauty of this recipe lies in its minimal ingredients and effortless preparation, but the result is a dish bursting with flavor. The cherry tomatoes are gently cooked for 30-35 minutes, allowing their natural sweetness to emerge and create a rich, aromatic sauce. Paired with al dente wheat spaghetti, a sprinkle of parmigiano, a hint of garlic, and a few fresh basil leaves, this dish proves that less truly is more when it comes to taste.

2 cups sweet cherry tomatoes, halved

250g wheat spaghetti

3 cloves garlic, minced

1/4 cup fresh basil leaves, torn

1/4 cup grated Parmigiano cheese

Olive oil

Salt and pepper to taste

Recipe:

Prepare the tomatoes:
Heat a generous amount of olive oil in a large pan over medium heat. Add the halved cherry tomatoes, a pinch of salt, and pepper. Let them cook gently for 30-35 minutes, stirring occasionally, until the tomatoes soften and release their natural juices, creating a fragrant, slightly caramelized sauce. The secret to this dish is to let the tomatoes cook down, allowing their sweetness to shine.

Cook the spaghetti:
While the tomatoes are cooking, bring a large pot of salted water to a boil. Cook the wheat spaghetti according to package instructions until al dente. Reserve a cup of pasta water, then drain the pasta.

Garlic and basil:
In the last 5 minutes of cooking the tomatoes, add the minced garlic to the pan. Stir and cook for 1-2 minutes until fragrant. Add in the torn basil leaves for a fresh, aromatic finish.

Combine:
Add the cooked spaghetti to the pan with the tomato sauce. Toss everything together, adding a bit of reserved pasta water if needed to bring the sauce together. Finish by sprinkling the grated Parmigiano cheese over the pasta and tossing again until the cheese melts into the sauce.

Serve:
