I use blender tek lol. Yolks, with a tsp of hot water, Dijon and lemon juice. Get butter foaming hot and slow drizzle in. Pinch cayenne and fleur de sel
After learning the blended method of making hollandaise sauce the manual whisk method just seems so unnecessary. It's literally like 10-15 minutes of whisking vs putting everything in a blender except for hot butter. Then smacking the on button and slowly pouring in the butter. 2 or 3 minutes from start to end. If you don't include prep it's like 1 minute. And. You never get scrambled egg. Always perfect hollandaise. No idea why people still bother besides wanting to be rustic or whatever.
Oh stop it, I was about to go to bed but now have to go and raid the fridge and marmelise everything I find in there in the hope of creating something tasty!
Next time try just softened butter instead of clarified butter. The taste of the sauce will be much better (less greasie) and you don't waste the butter solids.
