12 ounces pasta orecchiette, rigatoni, fusilli, or other short pasta
4 tablespoons parmesan cheese grated, or dairy-free alternative (optional)

  1. For such a dificult recipe, an explanation was really needed. Evidently you have to explain everything to the Americans, otherwise they are perfectly capable of eating pasta raw.

  8. Perfect! After seeing this dish on mango sooshi I've been looking for this exact recipe.
    Funny it's a Hilton recipe. I cooked in fine dining for 5 years there.

  9. As a previous Hilton cook this is my fav version. Some have steps that are too long and unnecessary.
    There's one cook in Italy making similar but waaaay too labor intensive but the sauce is so velvety. Maybe you know how to do a simple version of that.
