INGREDIENTS
For the steak
1 thick New York strip steak
2 teaspoons Diamond Crystal Kosher salt
2 teaspoons coarsely cracked black pepper
For the fennel and onions
2 tablespoons (30ml) olive oil
2 tablespoons (28g) unsalted butter
1 head fennel – core, stalks, and fronds removed, sliced
1 medium onion – sliced
1 pinch salt
For searing the steak and the sauce
grape seed oil or other high smoke point oil
1/4 cup (60ml) dry white wine
1/4 pound (60g) mild gorgonzola cheese
1/2 cup (120ml) heavy cream
salt and pepper – to taste

I love Jim’s family. It really adds to the channel. And watching some kid chomp down fennel is pretty funny. More kids should be exposed to exotic flavors. I miss the days of my son coming home from school, hungry, and eating a whole container of sushi before dinner was ready. Builds character.

At first i was appalled at the idea of gorgonzola on a steak but the fennel element got me interested again. Also, I totally agree that a less piquant gorg' would be the right choice. This is gonna be a very complex flavour profile!!

Fennel makes me nostalgic; after dinner at my zia/zio's (who were also my Godparents) the adults, and some of us kids, would stay at the table after the sfogliatelle & pignoli cookies and pass around a plate of figs and finocchio. Good stuff, all of my favorites. Miss them.
