Ingredients:
150 ml of warm milk
8 great of fresh yeast
250 gr of Manitoba flour
1 teaspoon of sugar
1 egg
8 grs of salt
50 grs of butter
Additional milk to brush on the dough
Whole pepper
Static oven at 180 degrees for about 35 minutes

Procedure

I melt the yeast in the warm milk. In a big bowl I put the flour, the sugar and the egg, then I pour in little by little the mixture of milk and yeast, now I knead by hand the mixture for about 3-4 minutes.
I add the salt, the butter, I strongly pound it out until I obtain an elastic dough.
I cover it with a plastic wrap and I let it rise until it’s size is doubled. Now I put the dough on the pastry board, where I previously put some flour, and I cut it in 65 gr pieces.
Now I knead every piece until I form a ball. I stretch the dough until I get a 20 cm long string. I now take two strings and I braid them together, I make a little pressione with my fingers to give it the shape of a beak. I use the grains of pepper for the eyes and I help myself with the tines of a fork to obtain a teal.
Finally I brush a little bit of milk on the birds, then I let them rise for about 30 minutes.
Inlet them bake in preheated oven at 180 degrees for about 25 minutes or until they get a golden colour.

This is a great idea for Easter meals.
