One pot Tuscan Pasta

Ingredients:
1 lb chicken (cubed)
1 tbsp Italian seasoning
Pasta (I use gluten free)
3 tbsp Cream cheese
1/2 cup Parmesan (can sub for vegan)
1 shallot
4 garlic cloves
Sundried tomatoes (chopped)
3 cups baby spinach
1/2 tbsp smoked paprika
1/2 tsp salt
1/4 tsp pepper
Instructions:
To a large pot, add some of the oil from the sundried tomatoes jar. Add chicken, Italian seasoning, smoked paprika, salt, and pepper, and cook for a few minutes. Add in 3 tbsp of Parmesan and cook chicken until cooked through. Remove the chicken from the pot and set aside. Add in garlic and shallot to the pot and cook until fragrant. Add 2 cups of water, pasta, and cook the pasta until al dente. Lower the heat to low and add cream cheese, sundried tomatoes, 1/4 cup parmesan cheese and baby spinach. Cook until spinach has wilted down and enjoy!
