ZUCCHINI “LASAGNA” ROLL UPS

Ingredients:
5 large zucchini
2 cups cottage cheese
1 large egg
1 cup grated parm (Plus more for topping)
1 tbsp pesto (plus more for topping)
1 large handful baby spinach
3 tbsp fresh basil (plus more for garnish)
1 1/2 cups shredded mozzarella cheese
1 cup marinara
1/2 tbsp garlic powder
1 tsp salt
1/2 tsp pepper
Instructions:
Preheat your oven to 425°. Cut your zucchini lengthwise into long pieces and place them on a sheet pan. Drizzle with olive oil, salt and pepper and place in the oven for 15 minutes or until they soften. In a large bowl add in cottage cheese, parmesan, egg, garlic powder, salt, pepper, pesto, spinach and basil. Mix well. In a large baking dish add a few tbsp of tomato sauce and lay your zucchini out on a flat surface. Add 1 teaspoon of the mixture to each zucchini slice, roll it up and place them in the baking dish. Top with fresh mozzarella, Parmesan, and bake for 30 minutes. Garnish with more pesto and fresh basil. ✨

Ricotta cheese has more protein in it per cup than cottage cheese.
If you blend the cottage cheese, it tastes and is textually closer to ricotta. I agree there is not much difference in taste but if you wanted to you could add a bit of ricotta to the cottage cheese which is what I usually do.
