Ingredients :
Lobster tails 3 pieces
Onion 1 piece
Celery 3 stalks
Carrot 3 pieces
Tomato sauce 1 tablespoon
Brandy or cognac 3 ounces (about 90ml)
Ice cubes as needed
flour 300 grams
Eggs 3 pieces
1. Process the lobster: Remove the meat from the lobster tails and seal them in a vacuum bag, add butter, and slow cook at low temperature (Sous Vide) at 51°C (125°F) for 45 minutes.
2. Make lobster bisque:
First, sauté the vegetables until fragrant, then add tomato sauce and stir-fry.
Add the lobster tail shells, deglaze with brandy or cognac, then add ice cubes and simmer over low heat for 30 minutes.
After cooking, blend into a paste and strain through a fine mesh sieve to obtain a silky smooth lobster bisque base.
3. Process the lobster tails:
Remove the lobster tails after slow cooking at low temperature, heat a pan with olive oil and fry for 2 minutes, then set aside.
4. Cook the wide noodles:
Boil the noodles in boiling water until cooked, then reduce the sauce in the lobster bisque base to flavor.
