The two studies I referenced in the video are linked in the description. The full University of Messina study is behind a paywall but you can access the entire Oregon State study for free.
What about aluminium core? Is there any leach of aluminum? I would prefer copper core.
When I make tomato sauce, I cut up pieces of stainless steel and put them in the sauce to get that secret metal flavor. I also make sure to play Iron Maiden for background music to stimulate those metal ions.

You can't cook acid in a carbon steel food pan without the risk of chromium and arsenic or whatever else. Ask Matfer. They know

The reason the older pots/pans had less N and C is because they've been leaching the N and C all thru out
their lifetime of being used ,so you consumed it over a period of time already.
Could you please tell how to deal with a brand new stainless steel frying pan, can I get rid of nickel and chromium by boiling sacrifice tomato sauce in it a couple of times before using ig for actual cooking?
Thanks, this has gone a long way to give me info on the issue I've been concerned with: I drink a lot of tea from steel (S/S) containers, and I also like having/using different ones… I buy some directly from China but I notice that many on amazon are also from China. They say 304 or 316, but even with a bit of skepticism, at least I know which heavy metals are most likely. Reference to the studies is exactly what I look for, and I can extrapolate (a bit) to how I use these tumblers… I do the steeping in a known brand, and only decant (a lot less hot) to the off-brands, and green tea is a lot more alkaline. How you eat?
I still believe stainless steel cookware to be one of the safest choices unless you are extremely sensitive to some of its components. Let common sense be your guide. Extreme testing methods do not reflect real-world use and practices. Back in April of 2024 a French testing agency called for a recall of Matfer carbon steel pans because they were leeching iron, chromium, manganese, and arsenic into acidic foods that were cooked in them. Just recently carbon steel pans made by Mauviel were also being recalled in France and the European Union for the same reasons. The local government testing agencies that performed these tests were boiling acidic water in raw, unseasoned carbon steel pans for hours. Of course they leeched these undesirable substances, but these testing methods did not follow the manufacturer's instructions for proper use and care, specifically to season the pans properly before use and to NOT cook acidic ingredients like tomato products, citric juices or other acidic substances. Cooks who like cooking with carbon steel know very well not to use their cookware this way. These tests were unrealistic yet the pans are being recalled anyway. The best thing you can do is be informed and make your choices accordingly. On the whole, I believe stainless steel cookware to be a far safer option than carbon steel, but they both have their issues. I will stay with my choice of stainless steel and enameled cast iron cookware. They do everything I need.

I use 100% pure diamond cookware. Scratchproof, non-leaching, very durable, very very beautiful. The only downside is cost. They say pure radium cookware doesn't even require a heat source.
Only enameled cast iron and glass are suitable and health for thermal preparation of food in them and no others, regardless of whether stainless steel with additives is 18/10 or 18/0.. that's a myth.
What should I use then
I have vintage copper bottom, stainless steel pots. (Stainless steel on the inside only copper on the bottom) some of them are probably 50 years old, maybe way more! They seem perfectly fine except for a bit of pitting. So going by this, its better that they are older except I'm wondering if that changes since they are pitted? It seems unclear online but likely that pitting could mean the leeching is more likely? Have you got any insight on this?
I'd say just hold your food over a fire with a wooden stick but Millennials all bought induction stoves because they equate water boiling with cooking.

I'm more concerned about the aluminum bolts that most pots use to attach handles on the stainless steel pots. I noticed the bolts on mine are scratched and worn down, meaning cooking acidic foods and my washing the pots in my dishwasher has resulted in consumption of a good bit of aluminum. I have an older set of pots that don't use aluminum bolts, or any interior attachments. So I am using those more, and searching at Goodwill for older boltfree stainless steel pots to replace the others. I love using my dishwasher, but apparently it hates aluminum.
titanium cookware is the safest and yet affordable option, or actually triply of titanium-aluminium-stainless steel. of course you can buy silver pan if you are too rich.
Guess what, if you live any where there is dust in the air. You will inhale minute quantities of Chromium, its ever where. I've been eating out of and from stainless steel plates, bowls and pots for 20 years. So you show me a ten year double blind study, then we can talk.

Just stop and think about this a minute. A study done in OREGON produced different results than study done in ITALY. Is anybody surprised by this?
Here is how this works. The fear mongering libs in the colleges want to appear useful. So they grab stainless cookware and test it and test it and test it yet further until finally they produce the results they were looking for. AHA! They say cooking is POISON!
