High-Protein Pizza Pockets
This incredibly simple 2-ingredient dough makes the perfect base for these crispy, cheesy pizza pockets. They are so filling and a great meal prep option!
Ingredients:
For the Dough
• 200g low-fat Greek yogurt
• 200g self-raising flour (or plain flour + 1 tsp baking powder)
• Italian herbs, garlic powder, and salt (to taste)
For the Filling (per pocket)
• 15g pizza sauce
• 20g low-fat grated cheese
• 20g mini pepperoni (or turkey pepperoni)
• Optional: Diced tomatoes or cooked vegetables
Notes:
• Storage: These pizza pockets keep well in the fridge for up to 4 days or can be frozen.
• Don’t Overfill: Be careful not to add too much sauce or too many toppings, or the dough may split during cooking.
• Reheating: Reheat them in the oven, air fryer, or microwave for a quick meal.
Instructions:
1. Make the Dough: In a bowl, mix the yogurt and flour until it starts to come together. Add the seasonings and knead on a floured surface for a few minutes until soft and not too sticky.
2. Shape: Divide the dough into 4 equal pieces. Roll each piece into a rough circle.
3. Fill: Add the pizza sauce, cheese, pepperoni, and any optional fillings to the center of each circle.
4. Seal: Fold the dough over the filling and pinch the sides and corners together to seal completely.
5. Cook: Cook in a dry, non-stick pan over low-medium heat with a lid on for about 5 minutes on each side, or until golden and crisp.
