This Sunday, we wanted something indulgent yet comforting — so we cooked up a creamy seafood pasta, loaded with prawns, mussels on the half shell, and a rich sauce with sundried tomatoes, garlic, and purple onion. Here’s our Sunday lunch spread:

Creamy Seafood Pasta with Prawns & Mussels

Creamy Seafood Pasta
Ingredients:
250g prawns, cleaned and deveined
500g cooked mussels on the half shell
250g pasta (spaghetti or linguine)
1 small purple onion, finely sliced
3 garlic cloves, minced
½ cup sundried tomatoes, sliced
1 cup fresh cream
¼ cup white wine (optional, to deglaze)
2 tbsp butter
1 tbsp olive oil
Salt & black pepper, to taste
Fresh parsley, chopped (for garnish)
Parmesan cheese, grated (optional)

Method:
1. Cook pasta in salted boiling water until al dente. Reserve ½ cup of pasta water.
2. Heat butter and olive oil in a large pan. Sauté onion until softened, then add garlic.
3. Stir in sundried tomatoes and prawns. Cook until prawns turn pink.
4. Deglaze with white wine and let reduce slightly. Pour in the cream, season, and simmer gently.
5. Toss in cooked pasta, loosening with pasta water if needed.
6. Gently fold in mussels just before serving.
7. Garnish with parsley and parmesan. Serve warm with crusty bread.
